Ingredients:
14 ounces bittersweet chocolate broken into small pieces
12 eggs, separated
4 tablespoons water
2 cups sugar
2 teaspoons orange zest
3 1/2 sticks softened butter unsalted
1 cup flour

Method:
Preheat the oven to 325°F. Grease the sides and bottom of a 10-inch pan. Add a few tablespoons of sugar and gently shake in order to coat the bottom and the sides of the pan with sugar. Tap out the excess sugar.
Beat the egg yolks with the granulated sugar until they get thick and form a ribbon when they fall from the beater.
Melt the chocolate with 3 tablespoons of water, whisking until smooth. Then let cool slightly.
Fold the warm chocolate into the egg mixture. Then stir in the orange zest and the softened butter. Fold in the sifted flour and mix thoroughly but gently.
Beat the egg whites until stiff. Then stir a large spoonful of the chocolate mixture into the beaten egg whites. Mix well and pour this mixture into the chocolate mixture. Fold gently, incorporating the whites completely (don’t over mix otherwise the egg whites will fall down).
Pour the batter into the pan. Place in the oven and bake for 80 minutes or until a cake tester inserted in the center comes out clean.
Let the cake to cool completely and place in the fridge.
Sprinkle with powdered sugar before serving.
